Bread Ingredients
310ml Water, About 38°C
10g Quick-rising Yeast
500g Bread Flour
15g Sugar
5g Salt
30g Lard
Mojo Braised Pork Ingredients
2kg Boneless Pork Shoulder
2 Heads Peeled Garlic
2-4 Shallots (Depending on Size), Halved & Peeled
Zest of 2 Oranges
Zest of 3 Limes
2 Tbsp Fresh Oregano Leaves
2 Tbsp Fresh Mint Leaves
1 Tbsp Fresh Ground Cumin
2 Whole Chillies, Stems Removed
250ml Olive Oil
1½ Tbsp Maldon Sea Salt
250ml Fresh Lime Juice
250ml Fresh Orange Juice
Sandwich Ingredients
Cubano Bread (Cut to the Desired Length)
Unsalted Butter, Softened, to Coat
4 Slices Ham
Yellow Mustard (I Used French's Brand)
Mojo-braised Braised Pork
Gherkins
Swiss Cheese
To make a Cuban sandwich, you will need to follow these steps:
**Meat**
1. Blend garlic, shallots, chillies, orange and lime zest, oregano, mint, cumin, olive oil, orange and lime juice, and salt in a blender.
2. Pour the marinade over a 2-kilo skinless and boneless pork shoulder in a large ziplock bag.
3. Marinate the pork in the fridge for 12-24 hours.
4. Braise the pork in a preheated Dutch oven at 180 degrees Celsius for 3 hours, flipping and basting every half hour.
**Bread**
1. Mix warm water and instant yeast, let sit for 5 minutes.
2. Add bread flour, salt, sugar, and the water-yeast mixture to a stand mixer with a dough hook attachment.
3. Knead the dough for 5 minutes on medium speed.
4. Add lard, knead for a few more minutes.
5. Let the dough rise in a covered bowl for an hour or until doubled in size
6. Shape the dough into two equal pieces, let rest for 10 minutes.
7. Shape each piece into a rectangle, roll it tightly into a log, and taper the ends.
8. Let the logs proof for half an hour or until doubled in size.
9. Mist your logs lightly with some water and score the loaf vertically with a razor blade or sharp serrated knife
9. Bake the logs in a preheated oven at 200C for 10 minutes, reducing the heat to 190 degrees Celsius after 10 minutes.
**Sandwich**
1. Cut the bread in half, butter & toast it.
2. Spread yellow mustard on both sides of the bread.
3. Add sliced pickles, seared ham, mojo pork, and Swiss cheese to the sandwich.
4. Butter both outer sides of the sandwich and press it on a preheated flat surface with a heavy-based pan.
5. Flip it and repeat on the other side until the cheese is melted and the sandwich is crisp!
